Okay, I just died!

White Chocolate Mocha Frappuccino Cupcakes (Starbucks inspired)
Prep Time: 20 minutes
Cook Time: 20 minutes
White Chocolate Mocha Frappuccino Cupcakes
Mocha Latte Cupcakes topped with a White Chocolate Frosting
Ingredients
For the Cupcakes
1 white cake mix
3 eggs
1/3 cup oil
1 cup hot water
1/4 cup International Delight Mocha Latte drink mix
For the White Chocolate Frosting
6 oz. white baking chocolate (chopped up)
1/4 cup heavy cream
1 cup butter, softened

1 1/4 cup powdered sugar

1/2 teaspoon vanilla extract
Instructions

  1. In a large mixing bowl dissolve the mocha drink mix in the hot water. Add the rest of the cake ingredients and beat on low for 1 minute. Beat on medium for 2 minutes. Fill cupcake liners 2/3 full and bake at 350* for 20-22 minutes. Cool completely.
  2. Stir white chocolate and whipping cream in a small saucepan on low heat until melted and smooth. Cool. Add to the butter, sugar, and vanilla and beat on high until light and fluffy. Frost cupcakes. Drizzle with chocolate before serving if desired. Makes 24 cupcakes. Store in a sealed container in the refrigerator.

This is not a new recipe, I have been making these cupcakes for many months now and they are always a big hit at parties. They are... Lazy Daisy Cupcakes

Ingredients:

  • 1 package, (18 1/4 ounces)yellow cake mix plus ingredients to prepare mix.
  • Yellow food coloring
  • 1 container (16 ounces) vanilla frosting
  • 30 large marshmallows
  • 24 small round candies or gumdrops
Directions:

  1. Line 24 standard (2 1/2-inch) muffin pan cups with paper baking cups. Prepare and bake cake mix in prepared muffin cups according to package directions. Cool cupcakes in pans on wire rack for 15 minutes.
  2. Add food coloring to frosting, a few drops at a time, until desired color is reached. Frost cooled cupcakes with tinted frosting.
  3. Cut each marshmallow crosswise into 4 pieces with scissors. Stretch pieces into petal shapes; place 5 pieces on each cupcake to form flower. Place small candy or gumdrop in the center of each flower.                     makes 24 cupcakes

So today I checked out a book in the library, and I must say, I am hooked!! It has a pretty generic title and no specific author, (just contributors)  But it is called, Cake Mix. I thought these lots of my readers would enjoy. They are, Lemon Cheese Bars!!

Ingredients:

  • 1 package, (18 1/4 ounces) white or yellow cake mix with pudding in the mix.
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon lemon juice

  1. Preheat oven to 350 degrees farenheit.
  2. Combine cake mix, one egg and oil in large bowl; stir till crumbly. Reserve one cup crumb mixture.Press remaining crumb mixture into ungreased 13x9 inch baking pan. Bake fifteen minutes or until golden brown.
  3. Beat remaining egg, cream cheese, sugar, and lemon juice in medium bowl  with electric mixer at medium speed until smooth and well blended. Spread over baked crust. Sprinkle with reserved crumb mixture.
  4. Bake fifteen minutes more or until cream cheese layer is set. Cool in pan on wire rack. Cut into bars. 
 Makes 1 1/2 dozen bars

Country Apple Dumplings

Ingredients

original recipe makes 16 dumplings

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.
  3. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew™ over the dumplings.
  4. Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

So last night I was watching "Next Great Baker" and kept hearing Biscotti, Biscotti, Biscotti. And I was like, what the heck is Biscotti? So I got home from school today and I was like well I'm gonna make me some Biscotti! So I did!

Ingredients

Original recipe makes 3 to 4 dozen

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  2. In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.
  3. Bake for 25 to 30 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack. When The cookies are cool enough to handle, slice each one crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Slices should be lightly toasted.

I was looking for something to do this weekend because I was BORED!!! So I decided to make cupcakes. And let me tell you they were great!!! If you are allergic to nuts I'm sure you could find a way around that,  I give full credit to the brand, Ghirardelli!!!

INGREDIENTS

  • 2 cups 60% Cacao Bittersweet Chocolate Chips by: Ghirardelli ( you could probably use any brand.)
  • 8 tablespoons (1 stick) unsalted butter, cut into pieces
  • 1/2 cup plus 2 tablespoons all purpose flour
  • 1/4 teaspoon baking powder
  • 3 large eggs
  • 3/4 cup sugar
  • 1/4 teaspoon salt 
  • 1 cup coarsely chopped walnuts (optional)
  • 1 cup mini marshmallows

INSTRUCTIONS

Preheat the oven to 350 degrees with a rack in the lower third. Grease or spray the top surface of the pan with nonstick spray and line the cups with paper liners. In the top of a double boiler or in a heatproof bowl over barely simmering water, melt 1 1/4 cups of the chocolate chips with the butter, stirring frequently until melted and smooth. Remove the chocolate from the heat and let it cool to lukewarm. Meanwhile, in a small bowl, whisk the flour and baking powder together thoroughly. In a large bowl, beat the eggs, sugar, and salt with an electric mixer on high speed for 2 to 3 minutes until the mixture is very pale and thick. Scrape the warm chocolate over the egg mixture and fold it in with a large rubber spatula. Sprinkle the flour into the bowl with half of the remaining chocolate chips and half of the walnuts. Fold just until the ingredients are blended. Divide the batter evenly among the lined cups. Sprinkle the tops with marshmallows followed by the remaining walnuts and the remaining chocolate chips. Bake 18 to 20 minutes until the marshmallows are golden brown. Set the pan on a rack to cool for 5 minutes. Run the tip of a table knife around the top of each cupcake to detach any melted marshmallow or chocolate from the pan. Let the cupcakes cool until firm enough to remove from the pan. Serve warm or at room temperature.


Oreo Balls!!!!!!!

Every year me and my mom give ourselves the challenge of making Oreo balls for all my teachers. It may not sound like it much it is quite hard work, But it is all worth it when I see there ear to ear smile!


1 (16 ounce) package Oreo cookies, crushed
(8 ounce) package cream cheese, softened
1 (24 ounce) package white chocolate bark
1 (24 ounce) package chocolate bark
Directions:

  1)  Using a blender or hand held mixer, mix Oreos and cream cheese together.

  2)   Roll into walnut size balls.


  3)Chill for an hour.

  4)Melt approximately 3/4 package of white almond bark.

   5) Stick a toothpick in an Oreo ball and dip it in the melted white almond bark.

   6)Allow to harden on wax paper.
      Takes about 15 minutes.


   7)While waiting, melt about 1/4 package of chocolate almond bark.

   9)When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond          bark.
   10)I just use a sandwich bag with a tiny hole cut in one corner to drizzle the almond bark.
